Harvesting: Last week of august

Light whole grape pressing, must is fermented as it was a white wine, in stainless steel vat at 15° C temperature-controlled. Wine remains on fine sediments in steel until spring. First fermentation in bottle in June. First early degorgement in November. Both operation are hand made, without wine-making machines.

Tenore Alcolico: 12,5%.

Service: serve at 9° – 10° C
Gastronomy: Perfect with appetizers, fish courses, highly recommended with crustaceans. Perfect also for a toast paired with a dessert.

Perfume:Fresh, floral of white flowers and citrus fruit, mixed with hints of white peach, plum, passion fruit, orange peel and honey; intense mineral feelings blended with balsamic hints of sage.
